As most single mamas know, money is tight ESPECIALLY around the holidays. School parties, gifts for your kids, other people’s kids, teachers, family, etc can leave your checking account super light. So what’s a Super Mom to do? You make it up as you go…literally!
This year I made marinara and soy candles. Both are super easy, inexpensive and delightful to receive. If you would like to try the marinara, check out my recipe. While it is time consuming, it is super easy and will be the best marinara you’ll ever eat. If you would like to try making candles, check out Peak Candle’s instructions. Peak has all the items you’ll need to get started. {Tip: to save money, try re-using glass jars from around the house such as baby food jars, pickle jars, olive jars, etc.}
The best part about a homemade Christmas is the time you get to spend with your children making the goodies. Small children do need to be supervised around knives and hot stoves, but the creative Super Mom can find small tasks for them to help with and feel SOOOOO BIG. Older children can be given bigger tasks to do and will feel a big sense of accomplishment and pride when they get to present Grandma or their teacher with a gift they’ve made themselves.
In the minutes following the Newtown school massacre my Facebook feed ignited with gun-control arguments. I refrained from saying much, other than I would like the ability to protect my children in any situation because I thought the timing of the argument was in rather poor taste. Those children, teachers, too, are someone’s baby, not a soapbox for gun control.
It’s been a few days now and I would like to offer my opinions as a mother. My children are presently 7, 6 and 3 – the same ages as the children gunned down in their classrooms at the start of their school day. While I do not personally know anyone involved, Newtown is about an hour away from my NY family.
As a mother, I try to teach my children empathy for others as well as responsibility for their actions. If you hurt someone you say you’re sorry and mean it; you ask them if there is anything you can do to help. My biggest responsibility as a mother is to protect and provide for my children as well as teach them social responsibility. I take this job very seriously… {if you think you know where this is going, you may be surprised} …which is why I plan on educating myself on a gun. I am going to the range for some target practice. I am signing up for the concealed carry class they offer so I can get my permit. I will then purchase a gun to carry on my person at all times {NOTE I did not say “keep in my purse” as 90% of my day is not spent with my handbag…bags get stolen…I’d like to see you try to steal my pants 😉 }. Am I a crazed individual seeking to disrupt cultural norms? Only when my Housewives don’t record. In the event that my children and I are faced with a madman threatening us with a firearm, I’d like the chance to protect them. Without a firearm, what am I supposed to do…hit them with my purse?! {You know, the purse I don’t have 90% of the day.}

I can hear you asking, ‘what do you plan on doing when your kids are at school?’ I HOPE that some positive school safety changes will come from this horrific event. Inner city schools have been dealing with weapons and violence for decades. They installed metal detectors, maintain one point of entry and have police or other armed security roaming the halls to make sure the kids get to class safely. If courts and other tax-payer-funded government buildings have these kinds of safety measures, why can’t our schools? Public schools are funded the same way {for private schools I say raise your tuition by $50/yr per family to cover the expenses.} I would absolutely support a change like that.
I can also hear some of you saying that guns should just be banned, nobody needs them, etc etc etc. Please don’t let your emotions make you naive. Guns don’t kill people {please see the below video as well as my earlier posting} bad people who want to hurt other people use guns to kill people. If, by some magical space magnet, all of the guns were pulled off of the face of the planet, we would still have bad people.
Before gun powder was “discovered” and guns were mass produced, wars were waged for THOUSANDS of years using swords, knives, axes, catapults, fire, arrows {do you really need me to go on??}. If you wanted to kill just one or two people, please don’t forget about lady’s choice: poison. In today’s world, you could also build an explosive device…I have heard that instructions can be found and easily downloaded from the web. You could also use chemicals {ie chemical warfare} or electronic disruptions. I would rather be approached by a guy with a gun than a guy with Sarin gas. I find the thinking that banning of all of the guns will solve the problem utter buffoonery.
I hope and pray that the people and legislative bodies that govern this wonderfully free country do not naively and emotionally rush to ban firearms. Countries with high gun ownership have a lower rate of crimes committed with guns. By contrast, countries who have low gun ownership {due to laws or disinterest from the public} have higher rates of crimes committed with guns.
I urge you to consider who and what evil really is and take steps to bring it to light instead of taking away the means to protect your family.

They go with just about everything and the kids love them! 90-seconds in the microwave and VOILA! You’re done.

Magnificent Man-Chili
You’ll need: 1lb ground beef, 1 can black beans {15.5oz}, 1 can dark red kidney beans {15.5oz}, 1 can light red kidney beans {15.5oz}, 1 can pinto beans {15.5oz}, 1/4 diced red onion, 1/4 diced orange pepper, 2 diced celery stalks, 1c V8, 3tbs worcestershire sauce, 1tbs red pepper flakes
Beans added to browned ground beef.
~ Brown the ground beef. Once browned, transfer to a pot.
~ To the ground beef add the cans of beans, orange pepper, celery, V8, worcestershire sauce and red pepper flakes. Cover and cook on medium heat for one hour, stirring occasionally.
~ Serving suggestion: our family’s favorite way to eat freshly made chili is over a bowl of pasta and topped with shredded cheddar cheese. Delish!
You’ll need: a stick of butter, 1 package of graham crackers, 1 12oz. package of chocolate chips, 1 12oz. package of butterscotch chips, 1 14oz. can of sweetened condensed milk, coconut and chopped nuts {pecans, peanuts or walnuts…any will work.}
~ In a large plastic zippered bag, crush the package of graham crackers into tiny pieces. Personally, I like to use a roller.
~ Melt the stick of butter and pour over the crushed graham crackers in a 9 x 13in. baking dish.
~ With a spatula, mix the butter into the graham crackers so that they are all coated. Flatten the mixture and spread to cover the bottom of the dish. Bake at 350 for 10 minutes until golden brown.
~ Let the crust cool for a few moments and then sprinkle the chocolate chips over the crust.
~ Sprinkle the butterscotch chips over the chocolate chips.
~ Add enough coconut over the chips to lightly coat them.
~ Sprinkle the chopped nuts over the coconut.
~ Finish by drizzling the coconut with the sweetened condensed milk.
~ Bake for 30 minutes at 350. Once baking is complete, let the cookies thoroughly cool before attempting to cut. Enjoy!
You’ll need: 6 hard boiled eggs, 1c cider vinegar, 1 can beets with juice {approx. 1c}, 1/3c sugar, 1/2 tsp. salt, 1tbs. minced onion, dash of bay leaves
~ Combine all ingredient EXCEPT eggs in a large bowl.
~ Add eggs carefully to bowl; the beet juice stains.
~ Cover and refrigerate for at least 36 hours prior to serving.
TIP: If you’re like me and you’re not a super big fan of beets, try putting one or two on top of a salad with some balsamic dressing. So. Yum!
~ Coat the bottom of a baking dish with the EVOO. Add to it a dash of dill and 2-3 medium cloves of garlic.
~ Add the shrimp to the baking dish and mix around in the EVOO and dill until the shrimps are coated. While you can leave the tails on, I prefer to remove the tails before baking. The best way to remove tails from shrimp is to squeeze and pull the base of the tail from the meat.
~ Ladle enough marinara over the shrimp to thoroughly coat them.
~ Sprinkle sliced black olives and feta crumbles over the pan from end to end.
~ Bake at 425 for 20 minutes; serve over pasta and amaze your family!
The Best Alfredo in the World!*
…and it’s super easy to make, too 😉
You’ll need: 1/2 cup butter, 2 cups heavy cream, 3 large garlic cloves, 1 1/2 cups freshly grated Parmesan cheese and 1/4 cup chopped fresh parsley
Prep Time: 10 minutes
~ Melt the butter in a medium saucepan over low to medium heat.
~ Add the cream, garlic and cheese and whisk quickly until the butter and cheese has been melted. Be careful not to get the sauce too hot because it can burn in the bottom of the saucepan.
~ Stir in parsley and serve. {The picture at the top shows the finished sauce served with chicken and linguine.}
*Normally I’m not a big fan of alfredo sauces. I think they are thick and disgusting. THIS SAUCE, on the other hand, is wonderful! It’s thin and flavorful. I’m a fan! This is the only alfredo sauce I’ll ever eat again.

A Big Ass Bucket
“In a big ass bucket, combine three parts corn syrup to one part water. Stir that shit. Then add some red food coloring to make it, you know, red. Don’t be heavy handed while doing this because less is more. When you’ve achieved your desired shade, add just a couple drops of red and blue to darken it, making it more realistic. THEN, add some hot cocoa powder. The hot cocoa is going to thicken up the mixture, making it look more real, and it’s also going to make it more opaque and just a little bit darker. Oh, it’s edible, too, so that’s gross.”
